** NOTICE **  Our Short ribs are fattier due to our effort to get our beef prime equivalent.  This is desirable for some (especially folks that smoke meat) because of the flavor it adds and less desirable for others because of the fat that is trimmed away.  They are priced to reflect the fat content (IE – If the fat was trimmed away by the butcher, they would be priced higher).
